Test Kitchen 5 Ways to Make Avocado Toast

Avocado toast – a simple but indulgent pleasure for millennials everywhere – or that’s what the media would have us believe.

If you fancy a twist on the simple classic, here are five different ways to switch things up. Just make sure to check your food budget first – these aren’t the most financially frugal of breakfasts, but so long as you don’t want to buy a house any time soon, I’m sure you’ll be fine.

The Classic One: Smashed Avocado on Sourdough

This “recipe” should be well and truly filed under “how to suck eggs”. But just in case you’ve been living under a culinary rock for the last few years, here’s the classic approach to avocado on toast.

Cut the avocado in half and remove the stone carefully, making sure to leave all of your tendons intact. Spoon out the soft green flesh, pop it on some toasted sourdough (or any old bread you’ve got lying around) and give it a mash with a fork. Season with salt and pepper. Drizzle with extra virgin olive oil and sprinkle on a few chilli flakes if you’re feeling decadent. Enjoy!

The Posh One: Avocado and Smoked Salmon on Rye

This may be a posh alternative but it’s also packed with protein. Start with some quality toasted rye bread and layer on some sliced avo and smoked salmon. Sprinkle with a few capers for an extra zing and drizzle with lemon juice. Season with salt and freshly ground black pepper, then settle into a chaise longue and have your butler bring you your posh nosh and the paper.

The Mexican One: Guacamole Style

If you like a little spice in your life, this is a great way to kick start the day. This spicy avo is paired with a simple salsa – you can either serve them separately or mix the whole lot together. To make the salsa, finely dice some onion and a handful of tomatoes. Squeeze in the juice of half a lime and season with salt and pepper.

Mash an avocado in the usual way and add a pinch of cayenne pepper to spice it up. Cayenne is HOT so go easy to begin with and add more to taste. Substitute cayenne for any chilli powder or hot sauce if you prefer.

Spread the spicy avocado on your favourite toast (we used wholemeal rolls for a bit of variety) and top with the salsa.

The English One: Avocado Fry-up

What goes well on toast? Avocado (obvs). Bacon (yum). Eggs (yes!). Why not combine all three to create a fancy fry-up that’s slightly better for you, all thanks to the addition of some smooth and sumptuous avocado slices?

To make this even more reminiscent of the classic fry-up, top some sliced white with avocado, a fried egg and some crispy bacon. Optionally serve with a cup of builder’s tea. Pukka.

The Cheesy One: Avocado with Goats Cheese

No, we not talking the culinary equivalent of a night watching Eurovision, we’re classing up the classic avocado on toast with soft goat’s cheese and a drizzle of good quality balsamic vinegar.

Top your favourite toast with smashed avo and crumble some soft goat’s cheese over the top. Go for something mild unless you really love that strong goaty tang.

Here’s a top tip, quality balsamic vinegar should display D.O.P. (“Denominazione di Origine Protetta”) or an I.G.P. stamp — “indicazione geografica protetta” which means “protected geographical indication” – that way you know it’s the real deal.
